Tonight's dinner is Taco Spaghetti. I found this recipe on facebook a few weeks ago and made it with a few small changes. We loved it so much I am making it again tonight!
Ingredients:
1 lb. hamburger (leaner is better)
1 package taco seasoning
1/2 cup water
1 28 oz. can crushed tomatoes
1 32 oz. carton beef broth
1 4 oz. can diced green chiles (I used medium - wasn't too spicy)
1 16 oz. box spaghetti noodles
4 oz. shredded colby/jack cheese

Directions:
In a dutch oven or similar pot brown hamburger until no longer pink. Drain excess fat. Add broth, tomatoes, taco seasoning, water and chiles. Bring to boil. Add noodles (I break mine in half so they fit in the pot better). Cook for 15-20 until noodles are done, stirring frequently. Add cheese. Mix up and serve.  

I do not have a calorie count or other nutritional info on this recipe. You can cut down on fat, sodium, etc. by choosing different ingredients (low fat beef, lower sodium taco seasoning, salt free tomatoes, lower sodium broth, etc.) I used the "regular" for my meal. All of my items came from Walmart and were Great Value brand and cost approximately $10 and will make around 6-8 servings.
